Mixed Bean Casserole

I made this the other night for dinner, and it's yummy!


1/2 C. vegetable broth
1 onion, chopped
1 green bell pepper, chopped
14-ounce package Gimme Lean Sausage
2/3 C. ketchup
1/3 C. red wine vinegar
1 Tblsp. minced garlic
1/4-1/2 C. brown sugar
2 tsp. mustard powder
3 bay leaves
15-ounce can vegetarian fat-free baked beans
15-ounce can white beans, drained and rinsed
15-ounce can kidney beans, drained and rinsed
15-ounce can black beans, drained and rinsed
15-ounce can garbanzo beans, drained and rinsed
15-ounce can pinto or red beans, drained and rinsed

Place broth, onion, and bell pepper in nonstick frying pan.  Break up Gimme
Lean and add it to the pan.  Cook, stirring frequently, until vegetables
are tender and sausage is cooked, 7-10 minutes.  Add remaining ingredients
and mix well.  Pour into large nonstick baking dish (or place in
slow-cooker for rest of the day).  Cover and cook at 325 degrees for 60
minutes; uncover and cook for 30 more minutes.  Makes 10-12 servings.
