Here's another kid friendly vegetarian/ minimal fat meal idea:
Tacos -nothing fancy, just simple yummy food
-Heat whatever brand shell you prefer.
-Drain two 15 oz. cans kidney beans (or pinto, black.....) and season
the beans as you would meat: in pan w/ chili powder, salt, pepper,
cumin, etc. or use packaged seasoning. Also add a little water or
salsa. Simmer a few minutes.
-Filling ideas: corn (I just use the frozen, cooked of course), chopped
tomatoes, warmed salsa, diced raw onions, shredded lettuce and if you'd
like, shredded soy cheese.
