VLF Latkes or Hash Browns

You can use this to make VLF latkes or hashbrowns.

What you need:

2 to 4 medium to large pototaoes
non-stick oil spray
onion

What to do with what you've got:

Shred the potatoes, (don't grate!)
Place the shredded potatoes into very hot water (140F)
Let soak for a minute or two, timing isn't critical
Add onion to taste.  Some things in life can be
discretionary, right?

If you're going to make hash browns, you're ready to cook
'em.  Jump down to COOKING.

To turn these wonderfully plumped shreds into latkes
(potato pancakes) add to the lot:

2 egg whites or egg substitute (or liquid egg replacers)
2 TBS wheat flour (I've not tried others, but they might
work)
1/2 tsp baking powder
Salt (optinal) to taste
Mix all ingredients together, then see COOKING.

COOKING
Preheat pan to medium high.
Spray as large a covered pan as you've got, taking pan off
of heat before spraying.
Now just plop everything into the pan, turn heat down to
between medium and medium-high.
COVER
Cook on one side for five minutes.
Carefully flip over potatoes, cover, and cook for another
five minutes.

This should feed four people, so the fat per serving is
close to nil.

The "secret" to this recipe is soaking the spuds in HOT
water.  They absorb water, swelling, and while cooking
helps the potatoes to steam/fry.

You can try to make individual patties from this, but I
just like to plunk the whole wonderful mess into a pan all
at once.  It's fast, easy, fun, and delicious!  Enjoy!
