tofu egg salad

This is in response to Renee's request for tofu egg salad or chicken salad.

Egg Salad

1/2 package of 12-ounce package extra-firm tofu, drained
1 tablespoon liquid egg (fat-cholesterol free egg substitute)
1/4 teaspoon tumeric
Dash yellow food coloring
Dash garlic, onion powder or whatever suits your taste
Enough fat-free, cholesterol-free mayonaise to mix ingredients  
Relish and chopped onion, optional
Mix ingredients and serve on whole-wheat bread or place in pita bread and
add fresh veggies of choice.

I have fun with tofu, and experiment to my heart's content.  I find tofu
makes a  sustaining meal.
