Perhaps you could try yogurt or yogurt cheese.
I use yogurt cheese instead of butter
or shortening in bisquits.
(Put plain nonfat yogurt in a strainer lined with cheesecloth in the
frig overnight and you'll have a thick substance similar in
consistancy to soft butter. The longer you let this drain, the thicker
it will get. )
I think that in a muffin recipe you might not even need to drain the
yogurt- just use as is.
