For Pam in need of high protein, low fat and it's also low cost. I make this soup when I'm rushed for time and hungry for something warm and nourishing.
1 cup lentils (any variety-rinse)
5 cups vegetable stock or broth
1 pkg. onion soup mix
1 large can stewed tomatoes
Simmer about 45 min. to 1 hr. then add 2 or 3 or 4 sliced carrots and cook til done.
