RE: Digest V99 #13 Yogurt Cheese

Here's a quickie tip for making (I think) better yogurt cheeses and spreads:

*Before* you put the yogurt in the coffee filter or strainer, mix in the
herbs, spices and/or dried fruit you plan to use.  It's much easier to mix
while more liquid, and it gives those ingredients extra time to flavor the
cheese while it's draining.
