Curried Lentil Soup

I am taking care of my mother this week and made this soup for our dinner.
She was just put on a high-fiber and seedless diet, so I've been trying to
figure out how to make something with tomatoes, but without its seeds. The
original recipe had a can of tomatoes in it instead of the sun-dried
tomatoes and tomato sauce which I used. I would have used tomato puree but
I couldn't find it at the grocery store. I dug all the seeds out of the
sun-dried tomatoes which seemed easier to do than with fresh tomatoes.

Fortunately my mother prefers meatless and fatfree, so it isn't hard to
cook for both of us.

     1/2 cup chopped onions
     1/2 cup chopped green pepper
     1/2 cup chopped carrots
   4 cups water
  10 each sun-dried tomatoes -- cut up

3/4 cup lentils -- sorted and rinsed
   2 teaspoons curry powder

In a blender or food processor, puree the onions, celery and carrots.
Transfer the mixture to a large saucepan. Add the water, tomatoes and
tomato sauce, lentils and curry powder. Cover and bring to a boil, then
reduce the heat. Simmer for 1 hour.
