This is my favorite muffin recipe, chuck full of vitamins and other good
stuff.  It does contain sugar but I use a sugar substitute instead.  Its
an easy recipe to play with.


1- 1/4 cups bran
1-1/4 cup skim milk
1 egg or egg substitute equivalent
1/2 cup unsweetened applesauce
1 cup shredded carrots
1 cup shredded apples
1/2 cup raisins or dried cranberries
1-1/2 cups flour
1/2 cup sugar or substitute
1 tblspn b powder
2 tsp cinnamon
1/2 tsp salt

bake at 350
