Bean burgers

Somewhere in my travels I bumped into a recipe for bean burgers
which I utterly adore. Can't remember to whom to give credit, but
I have modified it a bit so I suppose it ain't such big shakes.

1/2 cup adzuki beans
1/2 cup black eyed peas
1 large onion
2 large carrots
1 tsp yeast extract
2 cloves of garlic
1 tsp ground coriander
8 ounces (this can be thought of as about half a loaf) of whole meal/whole
wheat bread crumbs.
whole meal flour
salt & pepper to taste

Cook the beans separately if you are compulsive. Toss them into one pot if
you're
normal. The recipe book said the black eyed peas/beans would take longer than
the adzuki beans. They lied; actually the adzuki beans seem, to me, to have
a thick
skin which takes a lot of cooking. Any who: grate your carrots and mangle
your onion.
When the beans are done either mash them, or toss them in the old food
processor.
Stir in the onions and carrot and yeast extract. Crush you garlic and add.
Then stir
in the bread crumbs.

If you've done it correctly (or I've remembered correctly), you should have
a fairish amount
of greyish-brown, burgery consistency mixture. I press these together in
burger shapes,
coat them in whole meal flour and grill (that's broil to yanks). The recipe
actually called 
for pan-frying but I find the finished result is quite as tasty: perhaps
not quite as aesthetic
in appeal, but better from a ff perspective.

The crowing glory for these burgers is making a nice sauce to go with them.
They are very
good with a barbecue flavoured sauce. I make my own using tomatoe puree,
vinegar, brown
sugar, and something hot like cayenne or ground chili. Scrumptious!
