Additions to the recent post on veggie fajitas:

Fillings: black beans, mashed or not; zucchini; deseeded julienned hot
peppers (red jalapeños, red serranos are good- sweeter and less bitter than
the green); corn (the mashed beans hold it in).  Try grilling the zucc,
peppers, onion, mushroom instead of the frypan. I know it sounds weird, but
boiled red potatoes, hot and sliced, are good, too.

Marinade: replace the white vinegar with a lesser amount of balsamic
vinegar or veg Worcestershire sauce.  If the beans and corn are absent, try
soy sauce instead of Worcestershire.
