quick and simple cookbook


Here is a quick and easy recipe I make frequently.  It's warm, gooey, and VERY satisfying... and of course guilt-free.  Assuming your son isn't vegan, this might be worth considering:

French toast cheese sandwich:    For 1

2 slices thick bread
1 egg white
1/3 cup skim milk
sliced tofu cheese or fat free processed cheese slice
ketchup (optional)
salt and pepper

Whisk the egg white and milk together, seasoning with salt and pepper.  Make a cheese sandwich, adding ketchup if desired.  Soak the sandwich in the egg mixture, then cook in a non-stick frying pan.
Serve with a sliced tomato or perhaps a portion of canned fruit cocktail on the side.
