Egg Fried Rice

This is what we had for dinner.  My husband is going to make it next week
and has lots of ideas about different vegetables he is going to add.  It is
very much a zipper recipe where you zip in and zip out foods dependent on
what you have in the cupboard or like to eat.

                              Egg Fried Rice

  Amount  Measure       Ingredient -- Preparation Method

   1      cup           egg beaters(r) 99% egg substitute
   4 1/2  cups          cold cooked rice
   1      cup           frozen green peas -- thawed
     3/4  teaspoon      salt
     1/4  teaspoon      black pepper
   2      cups          fresh bean sprouts
   1      cup           chopped onion
                        soy sauce -- to taste

Lightly spray a large nonstick skillet or wok with cooking spray and heat
over medium-high heat.  Add egg mixture; stir-fry 2 minutes.  Add rice;
stir-fry 3 minutes.  Add green peas, salt, and pepper; stir-fry 5 minutes.
Add bean sprouts and onions; stir-fry 2 minutes.  Serve immediately.
Yield: 6  Servings (serving size: 1 cup).
