Marinades

I will be posting several marinade recipes that appear in the June, 1998
issue of Nutrition Action Healthletter.

                           Cuban Lime Marinade

Recipe By     : Adapted from Steven Raichlen's High-Flavor Low-Fat Cooking

  Amount  Measure       Ingredient -- Preparation Method

   6      cloves        garlic -- minced (2 Tbs.)
     3/4  teaspoon      salt
   2      teaspoons     ground cumin
   1      tablespoon    chopped fresh oregano
                        (or 1 tsp. dried)
     1/2  teaspoon      ground black pepper
     1/2  cup           fresh lime juice

Place the garlic in a mortar and pestle with the salt and mash to a smooth
paste (or mash in a shallow bowl with a fork).  Work in the cumin, oregano,
pepper, and lime juice.  Add a pound of vegetables.  Marinate for at least
six hours, stirring occasionally. Broil or grill until done, basting
occasionally with the leftover marinade.   Serves 5.
