Re: a special recipe for fresh string beans

Hi: The weather's been really hot in Missouri- mid to upper 90's!! We picked
our first string beans  and made this recipe. It sure was yummy. Hope you all
enjoy it!

Tomato Basil Green Beans (vegan low-fat)

1 pound cleaned and diced string beans
1/4 cup veggie broth
1/4 cup minced green onion
3 cloves garlic, minced
1 cup canned tomatoes or fresh, chopped
1/4 cup juice from tomatoes (only if using canned)
salt and freshly ground pepper to taste
1/4 cup chopped fresh basil

Saute onions and garlic in the veggie broth until onion is limp. Add tomatoes
and cook for 5-6 minutes. Add beans, sprinkle with salt and pepper, turn heat
to low, cover pan, and cook until beans are just tender. Uncover the pan and
check beans for doneness now and then. Stir in the basil at the end. 
Serve hot or room temperture.
Serves 4.
