try eggplant sliced 1/2" and marinated in soy sauce w/ some grated
ginger and a squirt of balsamic vinegar and 1 tsp of sugar...then grill
it @ 3-5 min per side...
	also it's great sliced on pizza w/ ff tomato sauce and ff cheeses, and
another favorite w/ eggplant is "parmigiano" style - saute in water till
barely tender and then add spaghetti sauce, basil and top w/ ff cheese
and baked til tender - i don't bread mine, but some folks do, so
