I've been offline with computer troubles for a few weeks
and am thrilled to have the list back... despite the week it
has taken for me to read them all!! :)
First, thanks to Brent for the Oatmeal Pancake recipe.
It is rapidly becoming my favourite breakfast.
Second, I recently bought a new cookbook which I have
gotten so many excellent recipes from that I thought I
should recommend it to you all.
"Moosewod Restaurant Low-fat Favourites". The recipes
are not all fat-free, averaging 16%cff, but there are lots
which are less than 10%cff (and these are even listed in the
index so you can find them fast). However, I've had no
trouble modifying most of the low-fat recipes to fat-free ones.
The recipes also include full nutritional anayses.
Since most of you seem to be in summer salad mode over
there, here's one of my favourite salad dressings from the
HONEY MUSTARD GARLIC DRESSING
2 heads roasted garlic
2 tbsp dijon mustard
1-2 tbsp honey
3 tbsp cider vinegar
1/4 cup unsweetened apple juice
pepper +/- salt to taste
Blend all ingredients. It will keep in refrigerator for about
4 days. Delicious on salads, potatoes, other veges, etc.
