Breakfast recipes...

Australian Breakfast Compote

1 honeydew, 1" cubes
1 canteloup, 1" cubes
2 ripe apples, cubed
2 ripe oranges, in sections
2 bananas, sliced
2 c. grapes
1 c. berries

Toss the fruit with a mixture of:

1/2 c. orange juice
1 T. honey
1/4 t. orange blossom water
1/4 t. rose water

For special occasions or dessert, top the compote with:

2 c. soy yogurt
2 T. honey

Garnish with:
6 ground pistachio nuts
pinch of ground green cardamom.

Breakfast Smoothies (serves 2)

Blend one of the following combinations until very smooth:

2 c. soy milk*
2 T. fresh wheat germ
1/4 c. maple syrup

1 c. soy milk*
2 c. orange juice
2 T. honey
2 T. fresh wheat germ
1 t. vanilla

1 c. soy milk*
1 banana
1 orange
1 T. fresh wheat germ
2 T. honey

2 c. soy milk*
1 t. cocoa or carob powder
1 c. orange juice
1 t. vanilla
2 T. fresh wheat germ

2 c. soy milk*
1 c. soy yogurt
1 c. apple sauce
2 T. honey
1/2 t. cinnamon

(or 2 oz. tofu and 6 oz. water per cup; 2 T. soy powder and 1 c. water; or
nut milk made from 1 c. nuts, 1 qt. water, and 2 T. maple syrup)

Bagels With Creamy Topping

4 toasted bagels
1 c. ricotta substitute*
1 t. vanilla
cinnamon sugar

Mix the vanilla into the 'ricotta', and spread over toasted bagel halves.
Sprinkle with cinnamon sugar and serve.

*almond pulp from making almond milk, or cooked and pureed sweet potato

Breakfast Cream Cheese

In a jelly bag or clean pillowcase, pour 2 c. soy yogurt, and let hang over
a bowl or sink overnight. In the morning, gently peel back the bag from the
cheese and put in a mixing bowl. To that add 1 tablespoon of preserves
(raspberry and orange marmelade work best, but peach and apricot are also
very nice) and mix in thoroughly. Serve with dark rye bread, or poppy and
sesame seed buns.

French Toast (Serves two)

In bowl whisk:

2 T. soy powder
1 c. water
1 t. vanilla
1/4 t. cinnamon

Dip bread slices in and fry in non-stick pan until slightly browned, then
flip. Serve with maple or fruit syrup.

Something Like Bacon (serves 2)

Marinate slices of firm tofu overnight in:

2 T. maple syrup
2 T. light tamari soy sauce
1/4 t. liquid smoke

Bread lightly in unbleached flour and fry in a non-stick pan until browned.

(If you don't have firm tofu, freeze regular tofu, then thaw before slicing
and marinating.)

Homemade Pancake Syrup

Cover and bring to boil:

1 c. sugar
2 c. water
1 T. fancy molasses

When sugar crystals are thoroughly dissolved, add:

1 t. vanilla
1 t. maple extract (or 1 t. rum extract)

For other syrups, omit molasses and use light corn syrup instead, and
substitute one of the following for the maple extract:

1 t. coconut extract
1 t. banana extract (+ 3 drops yellow food colour)
1 t. orange extract (+ 3 drops yellow, 1 drop red food colour)

using for quite some time, and now my kids are using them (with their own
variations on a theme!)
