Frozen fruit

The warm weather in BC (and a *huge* tray of cheap strawberries) has
promted me to make some summer favorites:

FROZEN FRUIT SALAD
2 cups seedless green grapes (eg sultanas)
2 cups chopped strawberries
2 cups chopped mangoes (if you can find them)
Freeze over night. Nibble as they come out of the freezer (Kids seem to
like frozen fruit even more than commercial popsickles/iceblocks, and they
are much healthier! For older kids try putting them on skewers before you
freeze them...)

or serve with:
1/2 cup non fat yougurt
1 frozen bannana
1/2 tsp vanilla
1 tsp sugar
2 tsp chopped candied ginger
whizzed in a blender untill smooth and creamy. You can add berries to make
it pink!

Another favorite is:
Strawberry apple crumble.

2 cups chopped green apples (eg Aussie granny smiths!)
2 cups chopped strawberries
1 egg white (or replacement)
1 mashed ripe bannana
1 cup 7 grain mix or oatmeal
1/2 cup brown sugar
1/2 tsp cinnamon or nutmeg

Pile the fruit up in a baking dish. Pile crumbly mixture of other
ingredients on top (its basically a cookie dough). Bake at 350C till
golden brown and bubbling.
