Here is a tofu based "milkshake" that you might like:
Frosty Strawberry Shake:
1 1/2 cups orange juice, chilled
1 pkg. (10.5 oz) silken tofu, chilled
8 oz individually frozen strawberries (do not thaw)
1-2 T. honey (optional)
Put orange juice, silken tofu, and banana into blender
container and whirl until smooth.
Add frozen strawberries and blend well, stopping to scrape
down sides as needed. Add
honey if a sweeter taste is desired. Yields four servings,
1 cup each. In a diabetic
exchange is is 1 1/2 fruits, 1 lean meat.
