calzone crust

I use a basic pizza crust recipe that goes something like this (I am not a
great one for precise measurements)

I TBS yeast
I tsp honey or sugar (I dont use it)
salt to taste
1 teaspoon of favorite herbs (I like rosemary)
about 3 cups of flour- I use one cup of whole wheat and 2 cups of white
about 1 cup of water

mix to good consistency, knead till elastic, moisten top with water and
cover to rise about 1 hour or doubled.  This will make one large pizza or
about 10 calzones. BTW, I just purchased a calzone press and find it works
far better than the time honored fold and press with a fork method. For the
first time mine are not coming apart during the cooking process.

Finding a good stuffing that the family will eat is hard for me as I am the
only vegetarian in a family of four.  Simply stuffing it with veggies and
herbs will not pass muster in my family- unless I plan to dine alone.  I
find myself improvising a lot using sauces and lf cheese in order to produce
something we can all live with, so any and all suggestions would be welcomed.
