Bean Soup

In the morning, into the crockpot
2 cups dried beans, all the same or asssorted varieties
1 onion chopped
2 potatoes, cubed
1 - 1 pound package frozen mixed vegetables
1/2 cup barley or wheat berries or brown rice
2 quarts water

Shortly before serving, add 1 6 ounce can tomato paste, salt and pepper to
taste and your favorite seasonings , we like:
2 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons oregano or marjoram

If you want to call it minestrone, just add  some cooked pasta before
serving and garnish with some grated ff parmesan cheese.
