A couple of days ago someone posted a message about the possibility of
using lipase to create a "cheesy" flavor in foods. I've never tried this
myself (but I just might sometime soon!), but I have had nice results
using a teaspoon or two of nutritional yeast mixed with my foods. Since
it's a dry powder I find it works best when mixed with something wet; a
teaspoon or 2 in a cup of soup is especially nice. A *large* bagful of
nutritional yeast in upstate NY costs around $4, but here in NY city it
can be considerably more expensive. Still, it's a bargain compared to
the cost of ff cheeses!
