Asparagus with roasted red pepper.
2 red peppers
2 pounds asparagus
2 tbsp of balsamic vinegar
1 tsp grainy mustard
Slice red peppers into big bits and grill until skin is blistered and they
are soft. Remove skin, and slice finely when cool. Microwave or steam
asparagus until tender. Marinate in dressing and chill.
Bannana and strawberry 'icecream'.
1 bannana for each person.
1/2 cup of strawberries for each person.
1tbsp crystallised (candied) ginger for each person.
Slice fruit, retain 1 strawberry per person for garnish. Freeze bits
overnight in plastic bag. Chop ginger finely. Remove from freezer and
blend all the ingrediants until they have the consitancy of icecream. i
usually make this just before serving, but it is okay if kept in the
freezer for an hour or so. Don't leave it too long or it turns to mush.
Put individual servings into bowls and garnish with strawberries. This is
also really divine made with mangoes and bannanas.
Even the most boring, SAD person should find these pretty dishes appealing.
A bean or green salad and some nice warm crusty bread are good to bulk out
