Mung beans

Hi Everybody!

I just bought a huge bag of mung beans and I was wondering if anybody had
any really good recipes.  (I bought the dried whole ones with the green
skin still on...and  I need to figure out how to use them!)
Here is a recipe from Sarah H. in Canberrra, Australia that is very yummy.

Mung Usli

1 cup of just barely sprouted mung beans
1/4 tsp whole mustard seeds
1/4 tsp whole fenugreek seeds
1 inch ginger grated
2 small green chillies, chopped
1/2 tsp turmeric powder
salt to taste
2 ripe tomato chopped

Add spices to hot pan in order listed, letting mustard seeds burst before
turning heat down slightly and adding other seasoning. (Remember to duck!)
Add washed mung sprouts, salt and tomatoes, Cook until tender. (Maybe 15
minutes?)  Garnish with coriander leaves.  This is really good with
cucumber raita (cucumber,NF yogurt, onion, mint and red pepper) and curried
baked potato.

Tandoori Baked Potatos:

4 peeled potatos (big chunks)
1/2 cup  NF yogurt
1 tsp Tandoori spices (either dried or paste eg Pataks)
1 tsp Lemon juice

Mix last 3 ingredients together. Roll the potatos in this mix.  Put in
nonstick ban and bake 40 minutes at 350 F.  Check doneness.  Really
addictive!
Garam masala or tumeric can be used in the same way.  Yummy!
