Carrot Raisin Muffins

Here's a recipe I just tried.  I think they're great!!  I doubled the
recipe.  From the cookbook Fat Free Living 3 Desserts by Jyl Steinback


1 3/4 cups flour
1/3 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 cup shredded carrots
3/4 cup orange juice
2 tbsp. nonfat sour cream
1 tsp. vanilla
1/4 cup egg substitute
1/3 cup raisins

Preheat oven to 375 degrees.  Lightly spray muffin cups with nonfat
cooking spray.
In a large bowl, combine flour, brown sugar, baking soda, baking powder
and cinnamon, and mix well.
In a separate bowl, combine carrots, orange juice, sour cream, vanilla
and egg substitute, and blend until smooth.  Add to flour mixture until
dry ingredients are moistened.  Fold in raisins.
Fill muffin cups 3/4 full and bake in preheated oven 18 minutes, or until
toothpick inserted in center comes out clean.
